A Neuchâtel speciality made from the red Chasselas fendant grape variety, Neuchâtel Blanc Non Filtré is the first wine of the year to go on sale on the 3rd Wednesday of January.
The presence of suspended lees makes it cloudy to the eye and gives it unexpected notes of citrus, particularly grapefruit.
Served like a Neuchâtel Blanc, it's perfect as an aperitif or with lake fish. It also goes wonderfully well with asparagus or a hard-boiled egg.
Some drink it very young, disturbingly youthful. We like it full-bodied, with a slightly veiled color. In this case, it comes from a summer bottling and can withstand a few years without losing its freshness, the lees preserving it.
Operating temperature: 10-12°C
Contains sulfites.
